Surprise Muffin

For the muffins

380 g flour

200 ml milk

190 g butter

200 g sugar

3 eggs

1 sachet of baking powder

1 sachet of vanillin

1 pinch of bicarbonate of soda

1 pinch of salt

Fabbri Amarena

For the frosting

200 g icing sugar

Water as required

Food coloring as required (optional)


20 - 60 minutes

Surprise Muffin


Use the ingredients at room temperature. Cream the butter and sugar together. Add the beaten eggs and stir into the butter and sugar mixture using a beater. Add the milk, beating continuously. Sift in the flour, vanillin, bicarbonate of soda and salt, beating continuously until the mixture is creamy. Fill the muffin cases ¾ of the way to the top, and push 2 or 3 drained Fabbri amarenas into the mixture. Bake in a pre-heated oven for about 20 minutes at 180°C.  Leave to cool and decorate.  For the frosting, add about 4 spoonfuls of water to the icing sugar, as well as the food coloring if you wish, and stir well.  Spread the frosting on top of each muffin and add a drained Fabbri amarena.
