Amarena Cupcake


225 g softened butter

225 g caster sugar

225 g self-rising flour

1 teaspoon baking powder

4 eggs

For the frosting

250 ml whipped cream

Heat the oven to 175 °C and place the cupcake cases in a muffin tray. Using an electric whisk, cream the butter and sugar together. Add the eggs, one at a time, and then gradually sift in the flour and baking powder. Spoon the mixture into the cupcake cases, which should not be more than ¾ full and bake for about 20 minutes. Prepare the amarena frosting. Add a bit of amarena syrup to the cream until it is nice and pink (taste it! ). Once the cupcakes have cooled, spread the amarena and cream mixture on top of them with a spoon, so it does not look too smooth. Use a teaspoon to drizzle a bit of amarena syrup on top and place a Fabbri amarena in the center. To make a little amarena heart, chop up a few amarenas and arrange them using a heart-shaped mold. And voilà!
