Amarena, or sour cherry, is a small fruit measuring approximately 10-15 mm, produced by the sour cherry tree, scientifically known as Prunus Cerasus. It has a spherical shape, a smooth and thin skin, and a vibrant red color that encases its juicy pulp. The flavor is initially tart and slightly bitter but becomes sweeter as it ripens.
The sour cherry is believed to have originated in the Middle East. According to legend, it was introduced to Italy by the Roman general Lucullus, famed for the opulence of his banquets. Ancient writings suggest that Lucullus collected the plant from Cerasus, a city in Asia Minor, to transplant it into his gardens.
