The difference with cherries

Cherries are generally larger than sour cherries and have a juicy, abundant pulp, while sour cherries are smaller, with a firmer pulp and a more tart and tangy flavor.

Even their use in the kitchen is different. While cherries are often enjoyed fresh or used for soft cakes and sweet focaccia, the intense flavor of sour cherries is particularly suitable for making syrups, liqueurs, and jams.

What is Amarena?


Amarena, or sour cherry, is a small fruit measuring approximately 10-15 mm, produced by the sour cherry tree, scientifically known as Prunus Cerasus. It has a spherical shape, a smooth and thin skin, and a vibrant red color that encases its juicy pulp. The flavor is initially tart and slightly bitter but becomes sweeter as it ripens.

The sour cherry is believed to have originated in the Middle East. According to legend, it was introduced to Italy by the Roman general Lucullus, famed for the opulence of his banquets. Ancient writings suggest that Lucullus collected the plant from Cerasus, a city in Asia Minor, to transplant it into his gardens.

The production of this renowned fruit began in 1915, inspired by Rachele, the wife of Gennaro Fabbri. She envisioned transforming a simple natural product into a unique icon of taste and style.

The product's true added value, which was initially sold in demijohns, came from its fine packaging: first, a hand-blown Murano glass jar (likely the first countertop container used for cherries in Italy), and later, a ceramic version crafted by Riccardo Gatti. The Faenza ceramist was, in fact, the designer of the iconic white and blue jar—a true symbol of Amarena Fabbri—whose floral decoration was inspired by Chinese porcelain.

What is Amarena Fabbri?


Amarena Fabbri is created through a candying process that faithfully follows an ancient method.
The cherries are placed in vats, known as "candiserie," and covered with syrup while maintaining a constant temperature and carefully controlling the ideal sugar concentration. This "light" candying process allows for the creation of the unique and inimitable Amarena Fabbri, preserving the fruit's distinctive outer crispness and tender pulp.
